My Old Friend


I want to introduce you to one of my favorite friends. And I kind of don't want to introduce you, because then you will go and try it and love it and there will be none left for me to buy, but here we go anyway.
This is the best cream of mushroom soup ever. It is gluten free and made with portobello mushrooms, so it has a ton of flavor. You can use it in the crock pot or in a casserole, or you can mix it with a can of Amy's Tomato Bisque soup and half a cup of Minute Rice and make Tomato Mushroom Rice soup.
This was one of my favorite foods and then, suddenly, poof. It was gone. I could not find this soup anywhere, and I was so sad. I had just found a great substitute for Campbell's Cream of Mushroom soup and then BAM, it was gone. It was even off the Progresso website, so I assumed they stopped making it.
Then, out of the blue, at Smith's the other day, there it was. There were at least twelve cans on the shelf. My seven-year-old thought I was completely crazy as I loaded them into my cart. And, amazingly, when I went back a couple of weeks later, there was more! They ordered more! Hooray for Smith's. I still can't find it at any other grocery stores. Have you seen this soup anywhere? Let us know so we can buy it, eat it, and love it. Here's one of the recipes I like to use this soup in:
Crock Pot Pork Chops and Potatoes
Brown 4 pork chops or 1 pork loin in canola oil over medium-low heat in a heavy pan. Season with salt and pepper. Use tongs to turn meat to other side. Peel and cube 5-6 potatoes. Mince 1/4 of a white or yellow onion. Place 1 bag of baby carrots, potatoes, and onions in the bottom of a greased crock pot. Layer pork on top of vegetables. Pour 1 can of Progresso Creamy Mushroom soup over the top. Cook on low for 7-8 hours. Happy eating!
